Zucchini Recipe: What To Make When The Zucchini Genie Visits
The largest zucchini on this platter is 22 inches long and 14 inches in circumference! This visit from the "Zucchini Genie" sparked a new recipe:
3 medium zucchinis, shredded into
6 beaten eggs with
1 cup of Feta cheese,
freshly ground pepper and nutmeg - to taste
Bake in the oven at 350 degrees for 40 minutes!
I served this for lunch with buttered sourdough toast, breakfast sausage and slices of home grown tomatoes. Delicious.

I'm just getting ready to make fresh peach popsicles with my daughter. (I'll let you know if they're easy. . . I hope, I hope.)
Many years ago, on a visit to my mother in West Virginia, I became addicted to the most delicious zucchini dish I've ever tasted--one of her neighbors grew giant (about 24" long, 5-6" diameter) zucchini, and since she didn't like them, gave them all to my mother. Scooping out all the seeds, down to the meat of each half, she then stuffed the halves with a mixture of what was basically hot ground sausage, breadcrumbs, some sort of cheese (probably mozarella), and the cleaned and separated seeds (maybe something else that I don't recall)--she then roasted these "Zucchini Boats", as she called them. They were fantastic! The whole month that I was there, in 1975, I was making frequent trips to the refrigerator, cutting off 3" slices of these "boats", and popping them into the oven--several times a day! Probably one of the tastiest recipes I've ever experienced!
