My Grandmother used to make the best homemade custard you ever eat. I mean it was good. I have never been the cook my Grandmother was but it is not for lack of trying. A few years ago I found this great recipe for Rhubarb cake that tastes a lot like my Grandmas custard. It is so good. It is quick and easy to make. It is best eaten after it has been cooled in the fridge. You will love this cake and it is just amazing what all you can do with rhubarb.
Rhubarb Cake
1 white cake mix
3 cups chopped rhubarb (sometimes I add more)
1 cup sugar
2 cups whipping cream (unwhipped)
Make the cake mix according to the directions on the box. Pour into a 9 x 13 inch greased pan
Arrange rhubarb on top of unbaked cake. I sorta push the rhubarb down just a bit.
DO NOT STIR! Sprinkle sugar evenly over rhubarb
Pour (unwhipped) cream evenly over the rhubarb.
DO NOT STIR
Bake at 350 for about 45 minutes.
The cream, sugar and rhubarb will form a custard layer!
When baked, let cool enough to put in fridge. This will keep the custard layer cool. Serve when the custard layer is completely cold.
