I was bit wary when I recieved the McCormick Recipe Inspirations Quesadilla Casserole from Gather to review for the Express Yourself Challenge. I have a family of picky eaters and I was worried about some of the ingredients, especially the black beans. But the Garlic Lime Chicken Fajitas were a big hit, so figured we'd try it and see what happened.


I always have ground beef in the freezer, so all I had to buy for this recipe was the beans, which we never eat, and some green chiles. I also substituted corn tortillas for the flour ones mentioned in the recipe, as I prefer to use whole grains whenever possible.
All I had to do was brown the beef with the onions in it,

then throw everything else in the pan with it,

and then layer it in the baking dish to bake.

It was so easy my two year old twins were able to help!


I didn't want it to be too spicy for them, so I only used half the green chiles and left out the red pepper flakes, letting each person sprinkle those on their dish individually.
After all my worries, the dish was a big hit! I topped it with some sour cream, the red pepper flakes, and some chives. You couldn't even taste the beans, and everyone devoured theirs.
