A few months back a fellow mommy blogger, Amanda Rettke innocently posted a blog that featured rainbow pancakes that she had made for her children. Yes, rainbow, like the bright colors in the sky after a rain. Amanda achieved this gleefully creative breakfast idea by adding food coloring to an otherwise basic pancake recipe and wha-la, (drumroll please) mommy magic. Little did Amanda know what furor a Crayola colored short stack would cause among some readers.  Though there were plenty of us, including little ol’ me, who thought the pancakes were clever and fun, many more turned up the heat about the colored hotcakes. Accusations of feeding her children “gross and unhealthy†food plagued her comment section. I was stunned by these negative reactions. Really? Do these neigh sayers even remember what its like to be a kid or what it is to just have fun? What a shame for them. Your kids grow up fast, so I say make life silly and kid friendly for as long as possible, before they have to go out into the world and work for one of those flapjack fun suckers.  Amanda’s kids didn’t just get funny pancakes for breakfast, they made a mommy memory. The kind of memory you call upon with fondness when you’re reminiscing about your childhood. The things that made you giggle and leap with childish joy for no other reason then, fun. My own teenaged son still likes to remember “crazy cereal†days, when we would take all the cereal boxes out of the cabinet and mix them all together.  Why? Because it’s fun! Sometimes we need to share the kid in us with our kids. Laughter is one of the greatest gifts we can give to one another. I think Amanda’s kids are lucky to have a whimsical and loving mommy. What do you think about the rainbow pancakes?  What kind of special mommy or daddy memories have you made with your kids? As for me, I’m saving the rainbow pancake recipe for my future grandkids. © 2010 Kiki Dahlke Amanda's original post:http://iammommy.typepad.com/my_weblog/2009/10/rainbow-pancake-sugar-cookies-winnie-the-pooh.html Â

I just saw the pancakes and immediately wanted to contact Amanda and ask her permission to use the photo for a 'Rainbow theme' on my website.
True--
Adding a lot of food coloring to our food isn't the healthiest of choices...but hey! This is the type of activity that kids remember when they grow up :-)
Laugh, be silly, have fun...and yes, make 'Rainbow' pancakes! Lots of them!
