Plum Salsa – this concoction is a spicy combination of flavors to share with your loved ones.
1 cup diced red plum
½ red onion, chopped fine
1 tbs. fresh ginger
3 plum tomatoes, peeled, seeded, and cubed
2 tbs. red wine vinegar
1 tbs. lime juice
1 tbs. orange juice
¼-1 tsp. chopped jalapeno (use as much as your taste can bear)
1 tbs. chopped fresh parsley
1 tbs. chopped fresh cilantro
Combine all ingredients and let sit for at least one hour up to one week. This recipe is wonderful served over chicken.
