I love Egg McMuffins, but since I am on Weight Watchers they cost me more points then I really want to give up. Luckily for lazy days Weight Watchers Smart Ones has a pretty decent alternative that is microwavable and costs just 4 points. However, when I was shopping for something else I spotted some packet of canadian bacon and figured I could make them myself, and add some veggies in . So I picked up a 3 pack of Egg Beaters (with the small 3 oz cups), 1 package of canadian bacon, english muffins, and 2% milk American cheese slices. Then I figured I would toss in what ever vegetables I had on hand at home.
One sandwhich contains: 1 English Muffin
1 3oz cup of Egg beater
1 slice of Canadian bacon or 2 slices of thin sliced deli ham
1 slice 2% milk American Cheese
Vegetables: I used onioin, green pepper, and spinach, and 1
slice of tomato.
I used a wok pan for the eggs, I placed the eggs and the vegetables in the wok pan and just let them cook. I did not scramble them or make an omelete, I did kind of fold it once I placed it on the sandwich. On the side of the wok I placed the Canadian bacon. when I made the sandwich in the picture I used 2 slices of thin sliced deli ham but you would do the Canadian bacon just the same, this is just to heat the meat up a little bit so that it helps melt the cheese, once it is hot remove it from the pan.

While the eggs are cooking and the meat is warming toast the English muffin.
When the eggs are cooked and the muffin toasted place the bottom of the english muffin on a plate, then place the eggs on top of top of it. Then place the cheese on top of the eggs and then place the ham on top of the cheese, this gives plenty of heat to melt the cheese to the perfect consistency,

Then top everything with the slice of tomato, and then place the top of the muffin on the sandwich.

The breakfast sandwich, I loved the eggs oozing out of the sides.
This is worth 4 Weight Watchers points like the frozen Weight Watchers ones except you can squeeze in a serving of vegetables and more fiber in this sandwich, and you get a little more eggs so it is a little more filling. If you can't find whole wheat English muffins it might even be less points, but I have not calculated that out.
