Miss Nerva's Down-Home Cauliflower Pie

Yield: 1 pie
Crust:
2 c Grated potato firm pack
2 ea Eggs beaten
2 Scallions chopped
1/4 c Onion grated
1/2 ts Salt
Filling:
1 ea Cauliflower head in florets
1 c Extra-sharp Cheddar cheese garted
3 ea Eggs beaten
1/4 c Half-N-Half
1/2 ts Salt
Black pepper to taste
3 tb Butter melted
1 ea Garlic clove minced
1/2 ts Oregano dried
1/2 ts Celery salt
1/4 ts Hungarian sweet paprika
2 tb Parsley leaves fresh chopped
1/3 c Onion chopped
Pre-heat ovento 400 deg-F.
Grease a 9" pie pan.
Crust:
Place your potato in a colander then sprinkle liberally with your salt.
Allow potatoes to sit for 10-12 mins.
Use paper towles to squeeze out excess moisture that forms on surface of potatoes.
Mix potatoes with onion, scallions & eggs.
Place this mixture into pie pan then pat into place across bottom & up the sides of your pan.
Bake for 40-45 mins.
Remove from oven then allow to cool for 12-15 mins.
Reduce oven temp to 350 deg-F.
Filling:
Beat together your eggs, salt, paprika, Half-N-Half & pepper the set aside.
Saute your onions & garlic in melted butter for 2 mins.
Add scallions & celery salt then saute for until onions are transluscent.
Add spices then stir well.
Add cauliflower, stir well then cook uncovered for for9-12 mins. while stirring frequently.
Layer 1/2 of cauliforwer mixture into pie pan.
Cover with grated cheese.
Layer remaining cauliflowr mixture on top of cheese then repeat with remaining cheese.
Pour Half-N-Half mixture over top then bake for 35-40 mins.
Remove from oven then sprinkle with sweet Hungarian paprika for color.
