While on a hunt for some new breakfast ideas, I stumbled upon a bunch of Weight Watchers "breakfasts" that sounded tasty. I use quotes because some, like the one below, are more snack/dessert....
I think this one is actually originally from Cooking Light, but I got it from an online WW Cookbook. Only after I put the cake in the oven did I remember to take pics, so I don't have a lot. Oops!
Banana Coffee Cake with Macadamia Nuts and Coconut

Servings: 12 (This is difficult!! I had such a hard time cutting it into 12 servings. I ended up with 8, then 16. Whoops!)
Ingredients
Cooking spray
1 1/3 cups all purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1 cup ripe bananas: mashed (about 2 six-inch bananas)
3/4 cup granulated sugar
3 Tbsp vegetable oil
1 tsp vanilla extract
1/4 tsp ground nutmeg
1 large egg or 1/4 cup Eggbeaters
1/4 cup packed dark brown sugar
1 Tbsp water
2 tsp butter
2 Tbsp (about 1 oz) chopped macadamia nuts: toasted (I used walnuts, as I already had them)
2 Tbsp flaked sweetened coconut
Directions
Preheat oven to 350. Coat a 9-inch round cake pan with cooking spray.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, salt, baking powder and baking soda in a bowl, stirring with a whisk.
Combine banana and next 5 ingredients in a bowl; beat with a mixer at medium speed for 1 minute or until well blended. Add flour mixture to banana mixture and beat until blended.

Pour batter into prepared pan. Bake at 350 for 30 minutes or until a wooden pick inserted in center comes out clean.

Cool in pan 10 minutes. While cooling, combine brown sugar, water and butter in a small saucepan; bring to a boil. Cook 1 minute, stirring constantly.
Remove from heat; stir in nuts and coconut.
Spread over cake. Serve cake warm.
MY THOUGHTS:
I ended up keeping this in the fridge and reheating one piece at a time when we wanted it. It got better as the days went by, as the topping soaked into the cake.
It was definitely delicious and I think it'd be perfect for a brunch/lunch/dinner party. Too sweet of a breakfast for me though!
