
With the weather being so cold, I woke up yesterday morning knowing that I wanted to have soup for dinner. I also knew that I had a lot of potatoes I needed to use up, so I instantly knew what to make for dinner – potato soup!
Since I always try to add some vegetables to my dinner, I added some Del Monte corn. I love the sweetness of the corn in a potato soup!
Crockpot Potato Soup
Feel free to play around with this recipe – it’s just a base!
- 8 Cups cubed potatoes
- 5 Cups water (or enough to cover Potatoes)
- 1 Knorr soup mix of your choice (you can use a can of cream soup if you’d rather)
- 4 oz cream cheese, cubed
- 1 Can Del Monte whole kernel corn, no salt added
- Pepper, and any other seasonings to taste (I added some rosemary and thyme)
Add cubed potatoes, water, and Knorr soup mix to the crockpot. Cook on low heat 8-10 hours, until potatoes are tender. Add cream cheese and seasonings and blend (I used an immersion blender for this). Add corn and cook until heated through. Serve and enjoy!
I served mine with a nice spinach salad to get some green on my plate!
