I am working on a small booklet of Christmas recipes with some tradition or history behind them. I thought I would share a few of them on here between now and Christmas. Here's an easy one for mincemeat pie, without the actual meat that used to be included in them.
Mincemeat Pie
1 (18 ounce) jar prepared mincemeat pie filling
1 1/2 cups chopped walnuts
2 apples, peeled, cored, chopped
1/2 cup packed brown sugar
1/4 cup rum
Prepared pie shells for double crust (or two pie shells
Directions
1. Combine mincemeat, walnuts, apples, brown sugar,and rum in a bowl. Mix well. Cover and refrigerate overnight.
2. Preheat oven to 425 degrees.
3. Let filling come to room temperature. Stir the filling well and pour it into one pie crust. Top with the other crust and make slits in to the top. Crimp edges.
4. Bake in preheated oven on low shelf for 40 minutes or until golden brown.
