I will share you the ROAST DUCK AND PLUM SAUCE RECIPE
Ingredients:
4 1/2-5 1/2 lb (2-2kg) duck
1 tbsp (15ml) vegetable oil
1/4 cup (60ml) plum sauce
MARINADE
1/4 cup (60ml) chicken stock
1 tbsp (15ml) brown sugar
3 tbsp (45ml) soy sauce
2 tbsp (30 ml) honey
1 tsp (5ml) five spice-powder
HINT*
To plump ducks,place fresh ducks in boiling water cover.Allow to stand 5 minutes.This firms the duck flesh before roasting or steaming.Drain well,then follow the procedures.
PROCEDURES
1.Combine marinade ingredients in a large bowl.Add duck and baste with mixture.Marinate 1 hour,Baste and turn duck every 15 minutes.
2.Drain duck,reserving marinade.Roast duck Chinese style on a rack over a pan of water at (350 degree F) (180 degree C) for 2 hours,basting with marinade every 30 minutes.
3.Chop duck into serving piece and arrange on a serving platter.Heat oil in a saucepan.Add plum sauce and heat through.Pour over duck.
Serve for 6 to 8 persons
