1 C chopped onion
1 C. finely diced celery (2 lg. stalks)
1 C finely diced green bell pepper
1 Tbsp. Vegetable oil
1 lg. clove garlic, minced
1 lb. ground beef OR turkey
2 Tbsp. chili powder
1/2 tsp. EACH: ground cumin, leaf oregano, leaf thyme, leaf basil
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. Worcestershire sauce
1 can (16 oz.) tomato sauce
3/4 c. Water
8 hamburger buns, lightly toasted, if you wish
Saute onion, celery and green pepper in oil in medium-size heavy skillet until soft, about 5 minutes. Add garlic; cook 1 minute. Crumble in ground meat; saute until half-cooked, about 2 minutes. Add chili powder, cumin, oregano, basil, thyme, salt and pepper. Cook just until meat is cooked through, 3 minutes. Stir in Worcestershire sauce, tomato sauce and 3/4 c. water. Bring to boiling over medium heat. Lower heat; simmer, stirring occasionally, until thick, about 30 minutes. Spoon onto buns. Makes 8 servings.
