A few summers ago, we drove to Louisville, KY. On our first night there, we didn't know anywhere to go. We just started walking and when we did we found Old Spaghetti Factory. I was so hungry we decided to go in. My hubby had never heard of it but I had from the internet. My son is a huge pasta fan and was very excited.
I ordered a combination plate that included their Greek Spaghetti. I thought it was really good. When I got home I tried to find a copycat recipe on the internet and couldn't find anything.
A few weeks ago, on one of the groups I am in, someone posted a recipe for it and I was so excited. I went out and tried to find the Kasseri cheese (or Mizithra cheese which is what the restaurant said it used). I couldn't find Kasseri but I did see Mizithra so I bought some.
Finally today, for lunch, I made the recipe and it is rich and delicious. Tastes very similar to what I tasted at the restaurant. For those who have tasted the real thing, you will adore this. So easy to make too. Just make sure not too over-brown the butter. You don't want it to burn. Once it starts to brown, turn off the heat and remove from the burner.
Spaghetti Mizithra
adapted from Old Spaghetti Factory
Serves 6
1 lb spaghetti
1 cup butter
1/2 lb kasseri cheese, or Mizithra cheese, grated
1/4 lb romano cheese, grated
1/4 cup parsley, chopped
Cook spaghetti until tender but firm to the bite; drain well. Melt butter in a large skillet and cook just until it begins to brown. Meanwhile, in a small bowl combine cheeses.
Place spaghetti on a warm platter. Sprinkle with mixed cheeses and then drizzle with the melted butter. Sprinkle with parsley. Serve.
