I took a couple of those Pillsbury sugar cookie rolls, and i froze them and sliced the dough off in cookie-thich sections, and baked them, and then with a little royal icing they tasted so much like the Lofthouse cookies. It's a little bit of work, but they were yummy!

Royal icing. It's really easy, here is a recipe! You can do it two ways, eggs whites or meringue powder.

I like Tracey's idea....or as you said, check the date on the ones you want...or go with the Little Debbie boxed thingies....mine was and still is partial to the brownies with the sprinkles on them...they are pretty cheap, so for a couple of bucks you could get enough for the whole class...and they have a shelf life of about a hundred years.

Yuppers~ you can! that is the only way cookies last around here, I have to stash them in the freezer... just be sure to wrap the package well to keep sealed :>}

I don't think they would stay fresh for a week. You could freeze them, but Tracey's idea of making them yourself will be cheaper, and taste just as good. Lofthouse cookies add up fast for an entire class.

Get 1 or 2 tubes (1 will make 24 cookies). When I make them, I roll the dough into a ball, and roll it in the sprinkles, then put it on the baking sheet, and flatten it with the bottom of a glass lightly. Pre-decorated, and easy to do. You could also just roll the edges in sprinkles, then frost the tops.

i'm going back and forth on both ideas. I just hate cooking cookies because all I have is a toaster oven. so the times varies ect. but then again maddie would love helping me. If I did decide to get the lofthouse.. even if the date was before the 12th and i froze them they should be good right?

They should be good still, but might not taste as fresh. I've never frozen lofthouse before. Look at the dates on all of them, and maybe even ask at the bakery if they have any that are newer. The older cookies go out first, so the cookies sitting out could be a week old already.

If you are worried you could also throw in a slice of bread. The cookies will stay soft longer and the bread will get hard as a rock.

I think if you froze them they would be fine. If you get the already made ones in the plastic containers I would put them in plastic sacks and seal them tight so the cookies don't get freezer burnt.

The kids will love them no matter what.

my next issue will be..are they nut free? i guess someone has a nut allergy in her class. I've never noticed if they were since my kids are not allergic to any foods

If they have nuts on them, they should be listed on the label because the law in the U.S. requires that all the top 8 food allergens be listed on the label.

One thing you might also think about is getting those packaged mixes where all you have to do is add eggs, milk, or oil. They tend to stay good for longer and taste more homemade.

If you decide to go with a pre-packaged food or cookie dough, you can look on the label for "product made in a factory that produces nuts". Or call the toll free number, or visit the web site to check, as the peanut allergy is very serious.

I made my twins cupcakes last year for their classes..and a kid was allergic to nuts..so she said bring in the packaging that i used to make them..and i included the frosting wrapper..and she was surprised she said most people forget that

hehe. well I've bought these from like a little store .. ya know one that doesn't get as much business at lets say walmart. and these cookies are supposed to be so soft.. the ones I got from there were hard! I was so disapointed

I'm assuming, if I understand you correctly, that they are in some kind of plastic shell type container. Those types of container aren't airtight, so if they have soft middles then they probably will get hard, even if you don't open the container.

I would move them to either Tupperware type of containers or some sort of seal-able bag. I used to work at a restaurant that would make various rolls and biscuits and they would keep at least a week if frozen and brought out a day ahead to thaw. We use plastic bags to hold them.

Check the school policy on homemade baked goods, the schools in our area will not allow homemade baked goods because of H1N1. Better safe than sorry if they will not allow them. Happy Birthday to your daughter!
