I wanted to try a new recipe for an Apple Cranberry pie, so I made one for our 2nd annual "Pie Day" at work, and man was it a success! Here is the recipe for those who may want to try it. I will definitely be making this for Thanksgiving and Christmas this year. I didn't get any pictures before it was all gone, sorry, but trust me, it looked good, and tasted even better!
Ingredients
1/2 cup brown sugar
1 cup white sugar
1/4 cup corn starch
1 heaping tsp cinnamon
1/4 tsp. nutmeg
A dash or two of ground cloves
1/4 cup orange juice
1/4 tsp. lemon juice
4 cups sliced/peeled apples (granny smith, or your favorite variety) - Reminder: If you use a sweeter apple, you may need to cut some sugar out. I used 2 granny smith and 3 others that were slight sweet and I thought it was a great combination.
2 cups fresh or frozen cranberries
1 pastry for double-crust pie
2 tbsp. butter
1 9-inch pie pan
Directions
In a large bowl, combine the first 6 ingredients (all the dry).
Peel and slice the apples, toss with the dry ingredients. Add the cranberries, toss again. Then add the orange juice and lemon juice to the apple/cranberry mixture and toss well.
Dump into pie crust, place dabs of butter evenly over the filling and add top crust. Make sure to vent top crust, or a lattice crust will also work well.
Bake at 400 degrees for 50 minutes. I cover the edge of my crust for the first 30 minutes to keep it from burning, and cook it completely uncovered for the last 20 minutes. Allow to cool before serving.
P.S. I may possibly add some orange zest next time, just for a hint more of orange flavor, but that is the only thing I would change.

This year we decided to ease up on the competition to encourage more bakers to bring in pies, and so we have just called it "Pie Day", instead of the "Pie Throw-down" as it was termed last year!
I have eaten so much pie today, and it's only 11AM... I think I will be rolling myself out of work today!
Your pie recipe might just solve my dilemma.
And I agree, the apples are wonderful this year. I used apples we had picked at one of the local orchards in this pie, and 2 others I made over the weekend, and they all were so delicious!
