Harvest Pumpkin-Olive Pudding

Harvest Pumpkin-Olive Pudding

8 c pumpkin cooked
2 c olive black & pitted
4 ea pitted dates
2 ea prunes pitted
2 tb almond oil
2 ts Karo dark corn syrup
1 ts cinnamon
1 ts ginger
1 ts cinnamon ground
1 ts pumpkin extract
1/4 ts nutmeg ground
1/3 c tapioca pearls

Puree all ingredients except tapioca your food processor.
Transfer this puree with the tapioca to a saucepan.
Bring to a boil over med-heat.
Do this while tirring constantly.
Reduce heat to low then cover & simmer for 15 mins. while stirring occasionally.
Serve either warm or chilled.
