What fruit do you have in your house?
We have fresh pineapple:
Pineapple Grill Relish
- 1/2 a medium pineapple, peeled, cored, chopped
- 1/2 a Red Sweet Bell pepper, chopped
- 2 TBS fresh parsley
- 2 TBS Lime Juice
- 1 green onion, sliced
- 1 jalapeno pepper, seeded and chopped fine.
- 1/4 tsp cardamom
Mix all the above in a bowl. Serve with grilled chicken or pork.

There is at least one grapefruit always on hand:
Grapefruit-Orange Relish
- 2 tsp sherry wine vinegar
- 2 tsp lite soy sauce (lite on the salt)
- 1/2 tsp grated ginger (or 1/4 tsp ground)
- 1 TBS Extra Virgin Olive Oil
- 1 medium grapefruit - peeled and sectioned and cut in 1/3rds.
- 1 medium orange – peeled and sectioned and cut in 1/2
- 2 TBS mild onion, chopped
- 2 TBS fresh parsley chopped
In a bowl, combine the vinegar, soy, and ginger. Whisk in the oil. Stir in fruit sections, onion, and parsley. Serve with Tuna or other firm fish.

Berries. Gotta love them berries:
Berry Sauce:
- 1 1/2 cup berries (strawberries – sliced or raspberries – cut in half)
- 1 1/4 TBS sugar
- 1 1/4 teaspoon cornstarch
- dash of almond extract
Combine the berries and sugar and let sit for a day (6- 8 hours) in the fridge. Drain and reserve the juice. Add enough water to the juice to make about 1/2 cup. Combine the juice and the cornstarch in a pot until the starch dissolves, cooking over medium heat and stirring constantly until thickened. Add the berries and the extract. Serve on top of pancakes or pound cake.
