While another recipe went horribly wrong yesterday, I had zucchini's leftover and wanted to find something to do with them. (I do not like food to go to waste.)
So this is what I made tonight. It is a super easy dish with only 4 ingredients. (You can eliminate the salt and parmesean cheese for healthier fare - I had mine that way and it tasted great.)
- 2 zucchini
- 1/2 cup of Italian Dressing
- Parmesean cheese
- Salt
In a large saucepan heat Italian Dressing over medium heat. Slice zucchini. When pan is warm add zucchini. Cover pan and cook 5 minutes each side. Lightly salt. Add parmesean cheese when plated.

...I use zukes in my spagetti too, it helps cutting back on the ground beef I use in the recipe...
