lol I know the feeling. My doctor gets onto me about my weight also. I only make it for the holidays around Christmas time.

You could always use yogurt in place of the cream cheese, and you're back in business! Anyway, tell him that you just need the right kinds of fats (those Omega-3s). This one sounds mighty tasty and you could even try some walnuts for more of a healthy boost. Thanks for posting this!

No telling how many kisses this cake would get me. My husband is a coconut lover. This sounds perfect for him. Sounds like you've been making this cake for quite a while, and that it is tried and true. Thanks for the recipe, Shaunee, I am tickled to have it.

I have one question. Reading your directions makes me think I'm supposed to put the cream cheese mixture on top of the cake mix and bake it. The cream cheese, butter and vanilla are not a frosting? They are part of the cake, yes?

I am so glad yo posted this, my mom made it years ago, but I lost the recipe!! This is an amazing cake, especially if you are a coconut/cream cheese lover. The cream cheese part does go on top, we always just kind of dolloped spoonfuls of it all over the cake. As the cake bakes, part of the mixture "collapses" inwards on the cake, creating the effect that it looks like an earthquake hit it. Not the prettiest cake to look at, but it tastes amazing!!
