Cuban Garbanzo Bean Chili
Serves 4
A fabulous flavor with traditional ingredients make this a family favorite!
1 onion, chopped
3 cloves garlic, minced
1 Tbl. olive oil
1 green pepper, cubed
1 Tsp. Oregano
1/4 Lb. ham, diced
1/4 Lb. beef chorizo, crumbled
1 large can (14 Oz) chopped tomatoes with juice
1/4 cup dry white wine
2 cups cooked garbanzo beans
Salt & Pepper to taste
Note: the garbanzo beans have a natural salty flavor and with the ham I usually don't find this recipe needs additional salt. Be sure to taste the chili before sprinkling ANY in.
Saute onion and garlic in oil in a large skillet or large saucepan until lightly browned, about 5 minutes. Add green pepper and oregano and continue to saute about another 5 minutes, until the pepper is tender. Stir in ham, chorizo, tomatoes with juice, wine and garbanzo beans. Heat to boiling.
Reduce heat, cover and simmer about 15 minutes. Remove cover and continue to simmer about 5-10 minutes until juices reduce and the mixture thickens.
Serve with warmed corn tortillas or over saffron
rice with a green salad. Great for a Fall or Winter dinner.
