Here is another recipe form my old recipe box. I'm sill organizing them.
I haven't made this one in a long time, but it's easy to do and is really good.
Microwave Cooking Recipe -- Overnight Brunch Casserole or Egg Casserole
Ingredients:
2 Tbsp butter or margarine
2 Tbsp All-Purpose Flour
1-1/4 Cups milk
1 (4 oz.) carton semi-soft natural cheese with garlic and herbs
8 oz. pkg. of bulk pork sausage (crumbled)
¼ cup chopped green olives
1 cup drained cooked English peas or corn (I use English peas)
12 eggs, slightly beaten
Garnish – tomato wedges, snipped parsley
Directions:
1 – 1 qt. Glass Measuring Cup
1 – 7” X 12” Baking dish
Place margarine in the glass measuring cup microwave on high until melted. (approx. 45 seconds)
Stir in flour and microwave on high (approx. 30 seconds),
Whisk in milk, microwave on high (approx. 2-1/2 min. to 3 min.) until mixture thickens and bubbles, stirring three times. Mixture should be thick and smooth.
Stir in cheese, microwave on high until cheese melts (approx. 1 min. to 1-1/2 min.) stir until smooth, set aside.
In the baking dish, combine the crumbled sausage and green onion. Microwave on high (approx. 5 min.) until sausage is browned and done, stirring twice. Drain well.
Stir in olives, English peas (or corn) and eggs. Cover with vented plastic wrap. Microwave on high until eggs are just set, stirring three times. (approx. 6-1/2 min.)
Fold in cheese sauce.
Cover with plastic wrap; refrigerate overnight.
To serve, vent plastic wrap. Microwave (approx. 7 minutes) or until heated through, stirring twice.
Top with tomato wedges and microwave (approx. 2 min.) or until tomatoes are warmed. Sprinkle with parsley.

All of the above can be prepared on your stove top and combined in the casserole dish for next day reheating and eating. The above directions are designed for microwave cooking. ---Enjoy.
