CANTALOUPE SUNDAE WITH ICE CREAM

This is a great dessert treat and so easy to fix. And now's the best time to make them because cantaloupes are really flavorful and cheap. I got them for 89 cents a piece last week at Aldis.

CANTALOUPE SUNDAE WITH ICE CREAM
INGREDIENTS
•    1 Whole cantaloupe
•    4 Scoops vanilla ice cream
•    2 Sprigs mint
PREPARATION
Cut melons in half, remove seeds, slice quarter size round off bottom of melon so it sits flat. Fill cavities with equal amounts of ice cream, approximately 2 scoops. Serve immediately with mint sprig garnish. You could also top these with fresh blueberries and strawberries. Serves 2.

I've eaten this and it's GREAT!!. Something else, that may sound odd is...my ex German national son-in-law once made the same exact thing only he sliced the cantalope into quarters, added ice cream then placed a bit of ham on it for garnish. It was delightful!

Mmmm ... sounds good to me, Lynn! If I remember correctly, there's an appetizer that's made with slices of cantaloupe wrapped with thinly sliced pancetta (Italian bacon).

All of a sudden, I think the mint looks like a pair of sunglasses on a scoop of ice cream ...
That's a great idea.

Since I have about 5 gallons of raspberries in my freezer (and more still coming, every day), I think I'll just mix my ice cream with those. I don't know what to do with them all and I'm drowning in the little suckers!

My grandmother used to make this for me but she added bananas and berries. It was really more of a fruit salad topped with homemade ice cream. Oh, what a fabulous memory!
