Then try my husband's Broccoli & Cheese Casserole recipe for a different spin on broccoli.
Ed introduced me to his casserole at a family Thanksgiving dinner years ago. It was a big hit with my family. It then became a tradition every Thanksgiving and even at some Christmas dinners.
The other night, Ed made a beautiful roast. I was tring to think of something different for the vegetable and suggested a Broccoli Casserole. Ed said "what about my recipe?" and I said "good idea." However, this time, I was going to be making it. I found his recipe card, looked it over and said "Geez, even I can do this!"
Hereis what you will need:
1 16oz package frozen broccoli--cooked and chopped
2 cans cream soup (broccoli, chicken, mushroom, etc)
2 cups mayonaise
2 cups shredded cheese
4 tablespoons instant onions
4 eggs (well-beaten)
Simple Directions:
Cook broccoli, then chop. I cheated by using a package of frozen chopped broccoli. Hey anything to make life easier. Put cooked broccoli in a large mixing bowl.

In a another bowl, empty out the 2 cans of cream soup. Mix well.
Here is where I got creative. I only had one can of Cream of Broccoli soup, and I really didn't want to go to the store, so I used the one can of Cream of Broccoli and one can of Cream of Chicken soup.

Add 2 cups of mayo. Mix well. I used "Light" mayo without any problems.

Beat 4 eggs very well and mix with soup and mayo mixture.

Add 4 tablespoons instant onions.

Mix in two cups of shredded cheese. You can use any cheese that you like. I used Cheddar and Motzerella.

Add the mixture tothe broccoli and mix lightly.

Put the broccoli mixture in a casserole dish or a 13x9x2 baking dish. (no need to grease or spray pan)

Bake at 350 degrees for 45-60 minutes or until top is crusty brown.
Eat and enjoy!

Cute store about broccoli this past weekend. My daughter decided to make a broccoli casserole and as she dished some out for herself her 2 year old daughter asked for some. My daughter thought, "great" until her 5 year old daughter leaned over and said, "don't eat that....it's yucky!" OH, OH. Mom was mad...and so was Daddy. Punishment for the 5 year old?
She had to eat some broccoli before she got dessert. After a bit of pouting and whining, Daddy - as usual - won out.

Your bowls match my set! That was fun to see. I managed to break one of the bowls and haven't found another to match......yet.
now if we could change the color of broccoli, i could get the man of the house to eat this. the only thing green he'll eat is lettuce with a whole bottle of ranch dressing on one leaf!! lol
But hey....hot, melted cheese with that wonderful crisp golden crust will fix almost, well, just plain ANYTHING. Behold, the power of cheese.....
one of my old tricks for my kids was brocolli covered in cheese, we called them trees and cheese....
they now as adults eat lots and lots of veggies....

I like that you can change it up by switching the flavor of soup, using different cheese or using different veggies. I'd try it with broccoli, cauliflower or the two of them together.
