I made this salad over the weekend to take to a pot luck dinner at church. We actually discovered this recipe years ago from Taste of Home's Light & Tasty magazine, which we used to subscribe to and loved. My husband fixed it, which was very lucky, because I really loved the stuff. I'm not real big on fruits mixed with veggies or with fruits served with main dishes (ie. chicken breasts and peaches), so I would probably never have made this - what with the carrots and apples mixed together. It really is good stuff - very refreshing. It calls up a sunny, warm spring day to me. The ingredients are all generally quite cheap, and the salad lasts a while in the fridge. We generally add some extra raisins, because they really add to the flavor of the salad. I would also recommend golden raisins, but that might just be my personal preference.
Carrot Apple Salad
Ingredients:
- 1 can (8 ounces) unsweetened crushed pineapple
- 2 medium tart apples, diced
- 3 cups shredded carrots
- 3 tablespoons raisins (I recommend golden raisins)
- 3 tablespoons flaked coconut
- 1/3 cup vanilla yogurt
- 1/3 cup plain yogurt
- 3 tablespoons mayonnaise
- 1 tablespoon lemon juice
Directions:
- Drain pineapple, reserving juice in a bowl. Add apples to the juice; toss to coat. Let stand for 5 minutes; drain.
- In a large bowl, combine the pineapple, carrots, raisins, coconut and apples.
- In a small bowl, combine the remaining ingredients. Pour over carrot mixture and toss to coat. Cover and refrigerate for 3-4 hours or until chilled.

Fruit with meat? As I was growing up I thought ham was always served with pineapple! Raisins are good in the stuffing for stuffed pork chops, and apples go well with pork dishes as well as dishes which combine pork or bratwurst with sour kraut.
