Peppers..peppers and more peppers

We went out for malt so I could try my hand at bagel making today.  Many many dollars later with NO malt in hand I have these beautiful red sweet peppers that I now need to do something with.  I'm thinking tonight I need to clean the freezers out to make room for my new acquisition..lol  46 of them to be exact and most of them are HUGE!  We picked up this bushel for $21 at the local veggie stand.  I didn't think this was a bad deal at all, they will make many fine meals. :)

I'm thinking of freezing the majority of them and maybe dehydrating a bunch also.

I love nothing better than caramelized onions and peppers atop any meat.  So I am a happy camper today. :)

As you can see by the mark on the ruler they are nice sized. :)

*sigh* but I still need my malt and can't locate any anywhere.

WOW! Those are some gorgeous peppers! They look fantastic! I would probably freeze most of them too. I would be making Unstuffed Pepper Soup with mine, it tastes just like stuffed peppers but without all the work.

Oh I'd love to know how you make it. My daughter makes stuffed peppers only she doesn't stuff the pepper she just cuts it up in the 'filling' and then bakes it like a casserole. It tastes just a good and no fuss. :)

They really are nice firm fresh peppers.

I'll dig the recipe out and e-mail it to you.......I got it from a Taste of Home Soup book and it is really good and it is so simple. My whole family loves it!

*laughing* I'm sure others were just a smiling with Bill carrying the bushel and me walking beside him going.....Mmmm stuffed peppers and caramelized peppers and and and...lol The cashier lady laughed and said 'someone' is going to be busy....lol

They are. Nice a firm ones. I think only one felt like it wasn't real firm but not a bad pepper.
Delicous looking peppers!
Can you freeze them without them turning to mush when they are defrosted?

Thanks! They are soft when defrosted but I use them in cooking so it really doesn't matter. They don't disintegrate into a pile of mush. They'll hold their shape...but then they are crisp like when fresh by no means. They do get soft.

Wow, those are really nice. Are you going to stuff some and freeze them stuffed? you could roast some and remove the skin and seeds, then freeze those. Good buy.

Thanks Patti. I told my sis earlier that I might stuff them and then freeze them. I'll probably just end up slicing them up with the seeds removed and freezing them that way. I'll have to decide tomorrow. Today I'm too tired to work on them.

Roasted red peppers. They are soooo good. And can them in a vinegar solution. Yummy.

Oh that sounds good too. I've never roasted them myself I have always just bought them. But I may just try that too. :)

I roast them all the time. Quarter them, seed them put them on cookie sheet and roast until the skins are black. Immediately wrap in foil until they are cool, then the skins are loose and come right off. I've never canned them, I eat them too quickly.

I've been out reading up on how to roast them. Seems simple enough. I'll probably just do them on the bbq since I don't have a gas oven. I'll probably eat them too fast to can too! lol I love having them on sandwiches.

I'm so jealous! We just froze another batch of green ones as I was already half way through what I had frozen over the summer. I'd love to get some red ones and preserve them. These are so gorgeous (well, as far as peppers being gorgeous).

I am thinking tons and tons of stuffed red sweet peppers with any variety of sauces--red, mushroom, white etc OR you might consider canning several of these after cooking them down into a sweet sauce for spaghetti, jam when sugar would be added or salsa if onions and garlic are added ! YUMMY looking thanks for posting !
