Carvel used to have something called a Brown Bonnet - dipping the cold ice cream into chocolate sauce. The sauce would then harden on top of the ice cream - so there'd be crunchy chocolate, then creamy vanilla.

there is something you can buy at the grocery...hard shell or magic shell ...something like that and it is the same effect !
