Vegetables are ripening in Sassy Cat's garden faster than she can eat them and my refrigerator is going to explode from vegetable overload! What to do with all those veggies? Roll out the grill....
The tank on my gas grill went empty, so I pulled out the charcoal kettle grill and fired it up. I usually use bottled Zesty Italian salad dressing to brush on grilling veggies, but I didn't have any. I hadn't planned ahead and the coals had gotten to the ready-to-grill stage, so I quickly grabbed a few things and stirred them together for brushing. And the veggies turned out YUMMY!!
I had too many vegetables to fit on a kettle grill all at once, so they had to go on in two batches. First, the corn, quartered green bell pepper and zucchini, which were split in half lengthwise. I like the zucchini almost blackened and the corn lightly toasty. If you try this, be sure to brush the vegetables with the Mustard Butter frequently.
The zucchini and pepper came off the grill and the corn was pushed around the edges to make room for the tomato and onion, which I skewered with bamboo so the rings would not fall apart. Yep, some chicken thighs found their way onto the grill, sprinkled liberally with McCormick Grill Mates Montreal Chicken Seasoning. The chicken had already been boiled (to make broth for Rocky & Beau, they prefer broth made from dark meat chicken) so it just needed to be browned on the grill.
With some cooked green and yellow beans from the garden and a baking powder biscuit, that is a plate full of yummy goodness!! =^o^= |

There is always room on the grill for fresh veggies.
By the way, I sometime use a spray bottle to keep the veggies moist on the grill. Sometimes with just water, or mixed with flavorings that won't plug it up. Seems to work good for me instead of brushing at times.
