Sweet pepper recipes?

While I was at Costco yesterday, I couldn't resist buying a large bag of orange, sweet peppers, affordably priced at 3.99 per bag. Other than putting them in omlettes or possibly salads. I don't know what to do with them. Anybody have any good ideas? Can I use them to make stuffed peppers? I just don't know. suggestions? BTW, these are the long thin peppers.

yes, you can use colored peppers for stuffed peppers...use them for anything you would use green peppers in....and they have more minerals and antioxidants than the green, so they are more nutritious, which is nice....plus i love the color in what i cook....i make a type of spaghetti sauce with mushrooms, peppers, and slices of BOCA sausage (if you eat meat, substitute Italian sausage), i also add peppers and onions and corn to beans and rice dishes....experiment and enjoy!
