my daughter and i had fun this afternoon making meatballs..... yep...meatballs.... a mountain of meatballs......i got the recipe from i don't know where..... if it is someone from gather please take the credit for it......this was easy to do and actually fun.....
RECIPE: BIG BATCH OF MULTIPURPOSE MEATBALLS

INGREDIENTS:
12-ounces tomato sauce
1 1/2 cups dry bread crumbs
4 eggs, lightly beaten
1/2 cup onion, finely chopped
1/4 cup green pepper, finely chopped
1 teaspoons salt, optional
1/8 teaspoon dried thyme, crushed
1/8 teaspoon dried marjoram, crushed
4 pounds ground beef
DIRECTIONS:
In a large mixing bowl, combine first eight ingredients.
Add ground beef and mix well. Shape into meatballs (use
a small cookie scoop if available) and place on broiler
pan so grease can drain while cooking. Bake uncovered in
350 degree oven for 30 minutes. Divide into meal-sized
portions. To prevent from freezing into a solid meatball-
mass, freeze individually on cookie sheets and then place
in freezer bags. Label and freeze. To serve meatballs,
thaw completely, and reheat with your choice of sauces.

this receipe is not written in stone.... i did not have any marjoram so just skipped it.... i did add a "shake" of oregano.......we used 5 pounds of ground beef so maybe 2 cups of bread crumbs.... i never measure.....i am not much of a salt eater but i would have added a touch more salt....
when the first batch came out of the oven we all had to sample and agreed they were good.......they are now in the freezer...once frozen we will package them..... just realized we didn't count but it made more than four dozen..... we also fixed four healthy size patties for supper tonight......
we now have quite a few meals to just thaw and heat.....and.....add so something.... suggestions please.....
