For months I have not really been able to enjoy the food that I was eating, as it would either give me heart burn or cause morning sickness. Now that I am no longer pregnant, I am enjoying my food again.
Since I am nursing the baby, it feels like the energy is literally being sucked out of me, and today I decided to make myself a lunch that could give me back a little energy.
I decided upon pita bread with pasta salad and spicy hummus, and a chickpea salad on the side.

I Filled the pita bread with some spicy hummus and mixed it with a pasta salad consisting of ice berg lettuce, tomato, cucumber, red onion and elbow pasta.

As a side I added some blueberries for brain food.
The chickpea salad is one that I first made for Skyler Kai's christening party, and I really love the combination of chickpeas and cucumber. This is definitely one of my favorite salads.

Chickpea Salad
1 can of chickpeas, drained and rinsed.
1 cucumber (peeled and cut into tiny pieces)
1 tomato (cut into pieces)
1/4 cup red onion
1 tablespoon minced garlic
1/4 teaspoon dried basil
1-2 tablespoon grated parmesan cheese
1 tablespoon extra virgin olive oil
2 -3 tablespoon balsamic vinegar
1/4 teaspoon salt
Of course I had to wait a while to enjoy the final result, as the baby demanded food as soon as I finished making my lunch.
