1/2 box of shortbread cookies, crush in cuisinart or baggie with rolling pin.
1/2 stick of butter melted. Mix with finely crushed cookies and press into a spring form pan. Bake 350 deg for 20 min.
Filling:
1 tub of softened cream cheese
1 big/tub of cool whip defrosted. Use all but save 1/4 for topping.
1 box of jello lemon pudding (make as directed)
1. Mix creamcheese with 3/4 coolwhip, pour into cooked cooled crust.
2. Make Lemon pudding as directed and place over creamcheese/coolwhip fluff.
3. Add a layer of cool whip on top. refridge for 1 hour or more. slice lemon and place on top for decoration. Serve. delicious!
