What's better than a hot, fresh quickie? Here's my second fast recipe you can whip up in minutes and feel like a star:
1 - 9 ounce carton of frozen creamed spinach (Seabrook is my fave - if you like your macaroni really juicy, use the 16 ounce package)
1 - 1 lb. box of pasta (I like to use rotelle for this because the spinach clings onto the curves - ooh, that sounds almost sexy)
1 - teaspoon of olive oil
Dash of powdered garlic
Dash of Italian seasoning
2-3 slices of ham ripped into little pieces
Parmesan cheese to taste
Boil two pots of water. In one pot, drop the package of frozen spinach. In the other, add a drop or two of the olive oil, toss in the pasta and periodically stir so it doesn't stick together. The pasta and spinach are ready around the same time if you put the spinach in the pot first. Drain the boiled pasta then pour the creamed spinach right over it. Add olive oil, garlic and Italian seasoning for extra flavor. If you're not vegan, toss in the bits of sliced ham. In a pinch, you can use sliced turkey, chicken or baloney or canned chicken - whatever you have in your fridge. Serve with Parmesan cheese and bread on the side. Feeds up to 6 (depending on how hungry your family gets - in our house, it serves 4).
