
Can you tell I love salads in the summer? This salad was inspired when I had a few shrimp and corn left over from a shrimp boil. The spiciness of the shrimp and corn really added some great flavor! Interestingly enough, I saw almost the exact same thing in Rachael Ray's Magazine the other day when I was flipping through!
South West Shrimp Salad
Romaine lettuce
Corn cut off of the cob
Boiled shrimp
Red pepper, sliced
Sprinkle of cheese of your choice
Dressing of your choice (I used just a little Ranch)
