Now these have been a huge hit the last two weekends in a row - I can almost promise if you love cheese and potatoes you will love these. They are very easy to make and they disappear quickly! Not the healthy choice but great at BBQs and potlucks. So here we go Ghostly's Cheesy Potatoes -
Shopping List
- Bag of thawed cubed hashbrown potatoes (sometimes called southern style) - if they are frozen put in microwave for 10 minutes.
- One can of cream of chicken (or you can use cream of celery)
- Large Sour Cream
- 4 Cups of Shredded cheddar cheese (this is normally two bags)
- One stick of butter melted to liquid (one minute in microwave)
- Salt and Pepper
Supplies
- Large mixing bowl & Spoon
- Casserole dish
- Tin Foil
Preheat oven to 350.
Mix potatoes, cream of chicken, butter, 2 cups cheese, salt and pepper and 3/4 the container of sour cream into the large bowl. Keep turning until the potatoes are covered.
Next scoop the mix into the Casserole dish, top with the remaining two cups of cheese. It should look something like this -

Cover with foil.
Bake for 1 hour covered.
Remove foil and continue to bake until cheese turns light brown. Now you are are watching the center, the sides will bubble that's fine but the cheese in the center needs to bake otherwise the center will be cold. This can take anywhere from 15 minutes to 45 minutes. Just focus on the center, let the sides bubble and boil it's ok. :0)

Wow, that sounds wonderful, but, I'm afraid I'd be the only one in my family to eat these.....hubby refuses to eat anything with sour cream, and the kid doesn't like this type of stuf......I know...picky, picky, picky!
