Scrounging for lunch in the fridge today, I found some tortillas, leftovers and odd stuff that needed to be eaten...
I warmed up a frying pan and tossed in a large corn tortilla. Over that I sprinkled chopped-up bits of a Pepper Jack cheese stick and some goat cheese, enough to spread out over the tortilla. Over that I sprinkled some cooked corn kernels that I sliced off half an ear of leftover corn, as well as some mung bean sprouts (I had soaked the beans, intending to make a soup, but they sprouted before I got back to the soup...). Then a spoonful of salsa, and I topped the quesadilla with another tortilla. When the cheese melted, I flipped the quesadilla over and warmed the other side till ingredients were hot, then slipped it onto a plate. It was a bit messy to eat with hands, so I cut it up with a scissors and used a fork. Que bueno! Yep, I'm patting myself on the back, here. Good thing I didn't have any more corn or cheese, or I would have overindulged and made myself another one of these!

They were soft tortillas and gluten-free? Where do you get them?
Thanks, Michelle. Yes, white or yellow corn tortillas. They usually come in two sizes, small or large. I buy them in packages of 100 at Safeway. I would think most grocery stores would have them (refrigerated or not; these weren't). If you are super-sensitive to gluten, you should call the manufacturer to make sure they are gluten-free. I tend to get a bit lazy about that with tortillas. You could also use gluten-free wraps and make a burrito out of it (I found some in the fridge at the local food coop).
I'll skip the goar cheese part - ha ha - but it sounds yummy yummy yummy !!!

I don't think I have ever tried goat cheese, but it sounds like a great lunch to me. I still haven't decided on dinner yet, but I might have to get creative as well.

Good idea, Alison. I melt pepper jack cheese on things, I melt goat cheese on things; I've never tried melting them together. I'll give it a try.

:-) Bhawana, I am STILL eating the sprouts, putting them in eggs and other stuff! I keep rinsing them off every day and they are just tasting better and better each time. I was soaking a cupful and of course they swelled to twice that amount and even more. So far I have not gotten tired of them....lol
Ooh. This sounds rather good. I was amazed what my son could do with the odds and ends left in the fridge. Must get lots of good practice.
