I am not bored. Really, I'm not! I just wanted to try and find a way to put the sweet potato into the bread without cooking and mushing it first.

Sweet potatoes are really, really good for you you know? You can actually survive on them if they were all you had to eat. We have been buying them instead of regular potatoes lately. They keep much longer, and you can use them for both savory and sweets. In other words, good stuff,OKAY!
SO, with my basic sour dough starter and recipie I peeled and grated about a 1 pound sweet potato.

I also decided to use my turbinao raw sugar, good choice, not to sweet figuring the added potato would also be a source of sugar and I did not want dessert bread. I used 2 tablespoons in with the water and yeast, and another 1/4 cup in with the flour additions.

I also again used the 1/4 teaspoon of added yeast, it seems to be the trick to this particular loaf I get. So I like the loaf, so it stays.
I would also like to note that by now, my starter smells very much like vinegar, and the sour flavor is more obvious in the eating. It also seems to contribute to the stabiity of the life of the loaf, my bread from last week stayed nice and soft all week, and for someone who cannot bake everyday that is wonderful. It holds up to making sandwiches as well as toasting, so I think for me, I have found my loaf.
This is my sour AFTER stirring.

Now back to the sweet potato version.
1 cup warm water
1/4 tsp yeast
2 tsps. raw sugar
Mix and allow to activate.

Mix in 2/3 cup sour starter.
To this mix add 2 cups high gluten flour, one at a time, mixing well after each cup added.
Add in the 1/4 cup raw sugar
1 tsp salt
the grated sweet potato
Mix well, cover the mixing bowl, and allow to set for 1/2 hour.

Add in 2 tablespoons olive oil.
Finish the dough by adding 3 to four cups more flour. I used wheat.
This dough is firmer, and I completed the kneading on a floured surface.

Place in an oiled bowl, turning once to oil the top. Cover, and allow to proof for 2 hours. Punch the dough down, take it out and knead it again place it back into the bowl, turning again. cover for another 2 hour proof.

This dough was magnificant to feel! Thick and firm, yet soft and elastic.
I put it on the lightly floured table again, lightly flattened it and allowed it to rest for 20 minutes or so....
Cut it into 4, almost 1 pound sections of dough and formed into my favorite oval shape.


Floured the tops lightly, and made my cuts, adding a third short cut, just because...
I allowed the loaves to proof, covered, for another hour and a half while I ran to the store.

They baked at 400, in a preheated oven, for 20 minutes, turning once during the bake.
They are fantastic, lightly sweet with a light flavor of sweet potato, who's texture blends right in to the bread.
So there I have it! A sweet potato sour dough bread without all the fuss of mushing potatoes and adjusting the recipie to much....I know I am loving it( and I mean right now with some butter..lol)

This sounds really, really good...a little crazy, too...but crazy can be fun and delish!
Windows started yesterday....the stained glass is safely in the garage today. The girls came home when they were taking it out...and couldn't get into the house because they couldn't walk under it to the door. They were sad. If you want it, come get it before I donate it to Builder's Supply which helps people without the means become homeowners.
I can't wait until my sour is more sour. Now that the weather is warm (hotter than Hades tomorrow and the next day), I am hopeful.
Ellie! So glad to see you and here your house projects are comming about! I should be jumping into the car right now and heading out with you offer of hte window....Roc and I were just speaking of the possibility of one more addition here after EVERYTHING else is done...(lol) and I could sure see that window as being almost the entire wall...sigh...IF we do so...it would entail much more thought and digging to level it....
I need to see how long a trip it is out there...my neice mentioned once a place out there she would like to visit..alas I am in no position to travel at the moment...but heck I could win the lottery(if I played it)!
I was concerned with the recipie that the potato would not soften up and become part of the bread and just be suspended say like coconut.... sut since it is more like carrot in its nature it did what I HOPED it would.
I will get to test it out on a few of my friends this weekend....but then they will eat anything ROFLAO.
speaking of gardening....I got bit for the first time while working in my garden...my fault....by an asassin beetle(I think)..OUCH...one of my tomato plants got bent over in a storm and while restaking it grabbed the top and was trying to hold it with the underarm...not smart without checkin' first.. didn't really see it..so I am lucky I didn't have to make a run to the DR office....
OUCH to the beetle. And in all places! I haven't been bitten by much my entire life. I still remember being stung by a bee when I was in preschool. On my upper arm...and I remember how it hurt and I cried and cried. Good thing I had a sweet mama and sweet big sisters!
Our kitchen window is awesome. It used to be divided into 3 because the ends opened...but we didn't need it to open because we have a sliding door in the kitchen and get good cross breeze from the sliding door in the family room. The new window is about 15 feet long...and it is a view of trees and hills and Portland. If a beetle or ice storm killed some of the trees, we could see Mt. St. Helens.
Anyway, I bet your friends love the bread. It sounds so interesting. I'm on vacation (at home) next week...the siding will be going on...but maybe I'll have time to bake...except it is supposed to be 95 tomorrow!
I'm exhausted...woke up at 2:30 and never got back to sleep.
Genius is putting it mildly. This is bread perfection.
I have added this to my recipe collection. I think it would be super to serve around Turkey Day.
I am making ham sammiches for lunch boxes tomorrow with it....sounds like a good combo...bet it would make great rolls or soup bowls( yum turkey leftover soup)
I am getting ready tomake some stuff for the 4th...doingmy gooey butter cake..and concocting a mango pudding...I hope it tastes as good as it sounds tome rightnow....LOL
I have a terrific sweet potato bread recipe and didn't think it could get any better... but I know I would love this, too!
