This turned out surprisingly well for being such a simple dish. Next time, I may throw in a clove of garlic just for extra flavor.
2 large boneless, skinless chicken breasts
1/4 cup flour
1/2 t dried basil
1/2 t lemon pepper seasoning
1 T olive oil
1 T butter
1 cup dry Chardonnay or other white wine
diced tomato for garnish
fresh basil leaves, thinly sliced, for garnish
Pound chicken breasts lightly in a ziploc bag or between two sheets of plastic wrap til about 1/2" thick.
In a large flat container with a tight fitting cover combine flour and seasonings. Add chicken; cover and shake lightly til chicken is well covered. Refrigerate 15 minutes.
Heat oil and butter in a large frying pan or cast iron skillet over medium high heat. Cook chicken breast for a couple minutes on first side til golden brown. Turn and cook other side til golden brown. Add wine.
Cover and simmer about 10-15 minutes or til wine reduces and chicken is cooked through.
I served the chicken and pan sauce over thin spaghetti garnished with tomato and basil alongside some steamed corn. This was simple and delicious!

I wasn't sure whether to even post there, Katie. Just never sure about family friendly dishes that contain alcohol :)
Most of the alcohol burns off, so it's not a biggie. And it's not like you're going to feed this to an infant, so sure, why not.

It looks good. Makes my mouth water. So this is how you get chicken the thickness you want? Beat it half to death? I've tried slicing chicken breasts thinner and squashing them and all sorts of things. Didn't think of beating it.
Just put the boneless skinless breast in a ziploc or between a couple sheets of plastic wrap and firmly pound them with a rolling pin or mallet. You don't have to beat them, per se.
Shannon, this just trips me out. Never would I have thought to whoop up on a chicken before to get it to be the shape or size I wanted. Will do. Will let you know how this turns out.
