I like to make a pot of beans every so often. The boys like to make nachos and quesadillas, so it's cheap and delicious to cook beans ourselves in the crockpot. But after a few days it's time to re-heat the unused beans. I had about two cups of cooked black beans sitting in the fridge recently, and some odds and ends of other veggies and leftovers. I did a pretty good job (if I may say so myself!) of creating a bean stew and cleaning out the fridge by using up the following:
2 cups leftover beans
3/4 cup leftover chicken
2 leftover Italian sausages
1/2 jar of leftover chopped pimentos
1 cup of leftover green enchilada sauce
1/2 cup leftover chicken juice, strained and separated from the fat
I started by sauteeing the following in a large pot:
1/2 of a leek, chopped (a leftover)
1/2 onion, chopped (a leftover)
4 carrots, chopped
1/2 c. chopped red bell pepper
When the veggies were sauteed to tender-crisp, I added the leftover ingredients and enough water the pot to make the soup into the consistency I wanted, which was a thick stew. I simmered it for about 10 minutes. The guys loved it!
