Recently I've been trying to go through my pantry/freezer and either use or throw away some food. I used to have a horrible habit of buying stuff I didn't necessarily need, just because it was on sale.
These recipes got rid of some beans I had sitting around and a can of pineapple chunks!
Fifteen Bean Soup
This one was really easy, and turned out delicious! I put about a pound of mixed beans in the crock pot after soaking them overnight, and covered them with water. After cooking them on high for about 3 hours, I turned them down to low and let them simmer for the rest of the day.
For seasoning I added so oregano I had growing outside, some bay leaves, and some chili peppers. I also threw in a chopped onion and a 28 oz can of crushed tomatoes when it was close to the end of cooking time. A little liquid smoke made up for the fact that I didn't have any ham soaking in there!
Now for the star of the show....
I used this recipe, substituting pineapple for oranges, and pastina (tiny star pasta) for couscous. I also used frozen sugar snap peas instead of frozen peas. It was delicious! A delightful meal for summer that is good both warm or cold. It had a nice heat to it that contrasted well with the pineapple, and was just refreshing! My picture definitely does not do it justice....

I'm not a fan of pineapple or beans, but I know some people who'd love these recipes!
The original recipe called for mandarin oranges instead of pineapple - maybe that would work for you!

The pineapple curry sounds really interesting. I'd like to try that.
I love the sweet/hot flavor that pineapple curries give! This one is great for summer since you can eat it either hot or cold.
