I tried a recipe for strawberry muffins last week and they turned out well. The girls ate them all and they were gone within a few days.
Last night, though, I tried this recipe that called for yogurt and they are amazing! They're so much more flavorful and almost "creamy" instead of dry. So delicious and worth passing on.
Ingredients:
1/4 c. butter
3/4 c.white sugar
1 egg
3/4 c.strawberries (mashed)
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1/4 c. yogurt
How to make this recipe:
Preheat oven to 375. Whip together butter, sugar, egg and strawberries until mixture is fluffy.
Sift together dry ingredients. Stir 1 cup of the flour mixture into the butter.Stir in the yogurt. Finally stir in the remaining flour mixture, just enough to moisten.
Fill well-greased muffin tins. Bake 20-25 minutes. Makes 1 dozen

I bet the yogurt makes them more moist. I will have totry thsi if my husband ever lets me go shopping again.
Yeah, it definitely did. 1/4 cup of yogurt isn't even that much, but it made all the difference in the world.

I would probably replace the sugar with honey. It would be healthier, and it would probably give it an even better flavor.
I pretty much always replace sugar with honey in baked goods, but I wasn't so sure about doing it with these. I've always been told to toss the fresh fruit in the sugar so it soaks up the juices and enhances their natural sweetness. Maybe half and half?
