I made this tonight and it was delicious!
Very refreshing salad.
Watermelon, Strawberry & Spinach Salad
For the Dressing:
3 cups strawberries
3 Tablespoons sugar (or to taste)
2 cups white balsamic vinegar
Pulse berries in food processor or blender, add sugar and vinegar. Let stand 1
hour in refrigerator, strain through a fine mesh sieve or colander and discard
solids.
Refrigerate. Keeps only about a week.
YIELDS: about 2 cups

For the Salad:
Watermelon
Strawberries
Baby spinach
Herbed Feta, crumbled
Wash and drain spinach to refresh it and place in a veggie bag or in a crisper
container.
Cut and seed watermelon and cut into cubes. Hull and slice strawberries - store
in refrigerater until ready to assemble salad.
Place spinach on salad or dinner sized plate
Add watermelon cubes and sliced strawberries
Sprinkle with crumbed herbed Feta
Drizzle with the strawberry vinegar dressing
YIELD: Depends on quantities

SONIA'S NOTES: I cut the dressing recipe by half as I didn't think we would use
it all in one week.
I think chopped and toasted macadamia nuts would have been nice sprinkled on
top. In the Gourmet Weekly they used toasted pecans (if I remember correctly)
for the Spinach & Strawberry Salad - no watermelon or feta.

Would you believe I have all these ingredients in the house today. I think I will try it for lunch.
What a beautiful salad, I was thinking that nuts would be a great addition. Macadamia nuts would be perfect, I just don't think of those often...I lean towards walnuts and almonds. Mmm...and it is so pretty.
Go for it Elizabob! I was surprised that as light and refreshing as it is, I didn't feel any hunger a couple of hours later....and THAT is a good thing....... ;-)
Morning Sue....It was beautiful! I have a little bag of chopped and toasted macnuts in the freezer, but didn't even think about using them until after I had eaten my salad. I still have all the ingredients and will probably make another salad for today's lunch.

Tanya, it didn't take more than 10 minutes to make the strawberry vinaigrette. Then just put in fridge for an hour and pass trhough the sieve. TA DA! Pure, simple..... It is very good and something different than all the other commercial dressings which are loaded with chemicals....
