My mom (C.L.R.) mentioned someone was looking for a good chocolate brownie recipe. This brownie recipe has been my family's favorite for several years. There are a few extra steps as opposed to a box mix, but the end texture is exqusite. We also like that this brownie recipe uses cocoa so there is no need to keep expensive baking chocolate on hand.
This is from Pillsbury's Brownies & Bar Cookies booklet from February 1994.
My apologies in advance for having no pictures other than of the finished product.
Ultimate Chocolate Brownies
You will need:
3/4 cup Cocoa
1/2 teaspoon Baking Soda
2/3 cup Butter melted & divided
1/2 cup boiling Water
2 cups Sugar
2 Eggs slightly beaten
1 1/3 cups all-purpose Flour
1 teaspoon Vanilla
1/4 teaspoon Salt
(My suggestion would be to assemble your ingredients into groups and have measured & ready to go - beaten, boiling, melted, etc. - This is not a recipe where you want to go away and prepare the next step.)
Preheat oven to 350 degrees & grease 9x13 pan.
Sift (to remove lumps & blend) Cocoa & Baking Soda into mixing bowl.
Stir in 1/3 cup of the melted Butter.
Add boiling Water & stir until it thickens (this means very thick - it should turn into a paste).
Stir in Sugar, Eggs, & remaining Butter - keep stirring until smooth.
Blend in Flour, Vanilla, & Salt.
Pour into prepared pan and bake for 35-40 minutes - they should begin to pull away from the sides of the pan when they are done.
Variations:
Chocolate Mocha brownies: Use coffee instead of boiling water.
Double Chocolate Brownies with Chocolate Chips: The original recipe calls for 1 cup added at the very end.
Chocolate Nut Brownies: 1 cup of chopped walnuts could also be added at the end
Chocolate Frosting: The orginal recipe calls for frosting with the following when brownies are cool: Beat 6 Tablespoons Softened Butter - Add 2 2/3 cups Powdered Sugar & 1/2 cup cocoa - alternately with 1/3 cup milk - Beat in 1 teaspoon Vanilla. Chips or Nuts could be folded in or sprinkled on top of frosting.

That's what is so great about these--I always have cocoa, but never have the chocolate squares. Good thing Elizabeth likes to bake--I always have her whipping these up. I like to freeze small ones and eat them frozen--or out of the freezer for just a few minutes.

Baking soda isn't in the recipe...or is that the same thing?

I edited the recipe--I accidentally put in "salt" instead of soda. Baking soda is what makes it rise. Have you heard of Arm & Hammer Baking soda that they put in the fridge to absorb odors? That is baking soda--it comes in a little yellow box in the baking isle.
Any brand of cocoa will do Hershey's is one brand. Cocoa is ground cocoa beans with no sweetener added.
