Diabetic Friendly Zucchini Bread

I am not diabetic, but I do like baking recipes that are low in sugar.

This is a good thing.  Ric is diabetic and I need to find things that I can fix and not worry about his sugar levels...that are never as good as they should be.

I sure wish that recipe had the nutritional info on it. I want a good zuchinni bread recipe that has the carb count on it. I found a couple last night that say about 30 carbs per slice.

Based on calculations of the ingredients I am guestamating it is has about 17 grams of carbs, which is about half the amount of regular zucchini bread. But it is high in fiber so if you are doing carb points you could delete 1 point, so this would be worth nearly 2 carb points per slice.  It would count for 1 starch points, 2 fat points, and 1/2 vegetable.

Rae, thanks for posting this.  I'm not diabetic, but have been switching to healthier breads along with everything else for the most part.  Will let you know how it turns out.  I'm excited to try this.
