Incredible Egg Salad Makes For A Tasty and Nutritious, Inexpensive Meal by Rob Appell
I'm one who buys inexpensive foods to eat...and the less the meals cost; the better it is for my finances. Being one who doesn't have much money to spend on groceries, I have to make due on what I can afford. With the cost of eggs having now dropped, you can get lots of protein and nourishment out of a dozen for under one dollar here. Eggs can be used as ingredients mixed with other things...or they can be eaten on their own. There are so many ways to prepare eggs...and they're not just for breakfast any more.
Gather wants affordable egg recipes of under $2.00 per serving posted to their 'Incredible' group and the first 100 entrants will receive 50 points for free. I always make sure I have a dozen eggs in my refrigerator...in case I need them to add to a dish or do some baking with. Usually, I still have a whole dozen as their sell-by date approaches. I know I'll be having egg and olive salad for a few meals to eat them up so they don't go to waste.
I fill half a large pan with water, put the eggs in and place on the stove to boil. When the water is roiling, I remove the pan from the heat and place under running cold water for about 15 minutes. This makes the egg inside the shell constrict...easier to peel with no little pieces to bite into later. I crack the shell on the side and it usually comes off in halves.
I cut the eggs into small pieces and place in a large bowl along with green olives stuffed with pimentos after I've chopped them up. Olives are optional and can be left out, making this meal even less to prepare. Add mayonnaise to your tasting...a little more if you like your egg salad a bit on the 'soupy' side; less if you'd rather have dried salad. I also add a touch of yellow mustard, a dash of celery seed and some of the juice from the olive jar. (Take this into consideration as to the consistency of the salad.) Mix well. I cover and refrigerate for at least several hours or overnight, so the flavors can meld together.
I prefer lightly toasted bread and add a generous scoop of salad. A couple sandwiches makes a meal for me. I fill myself up while not emptying my wallet.
Eggs here are 8 cents each (99 cents a dozen for large)...an egg and a half per sandwich...12 cents. Two slices of bread...10 cents (99 cents for a large loaf containing twenty slices. 5 ounces of olives (half a jar at $2.29...$1.15...or about 15 cents for each sandwich). Mayo, mustard and celery seed...about a quarter total. Add it up and the costs is 60 to 65 cents for per sandwich. You can
usually get about 8 sandwiches from the entire batch. Even eating two sandwiches, the cost is well under $2.00; enough left over to add lettuce, tomato or even a slice of cheese and a piece of fresh fruit for dessert.
Go ahead and give it a try...with or without the olives. It's fast, easy, good for you and best of all; the cost is very low while the nutritional benefits are very high. When taking allof these factors into consideration, the egg really is incredible! It hits the spot eggs-actly.

Incredible Breakfast Bread Pudding by Katie Scarlett O.
I make a bread pudding which not only makes a wonderful dessert, but also a very good breakfast as it incorporates some morning favorites. It's also very frugal as you can use bread that is starting to dry out and become stale.
I first grease the bottom and 1/2 way up the sides of a deep baking dish.
8 Slices semi-dry cinnamon swirl bread
1/2 - 1 cup cranberry raisins (you can use plain raisins also)
2 1/2 cups cream (I use heavy cream, but light cream and even regular milk work also)
1 1/2 cups milk
4 Eggs
2 teaspoons vanilla extract
2 teaspoons granulated sugar
First, I slice half the bread into halves, diagonally and line the bottom of the pan with them. The remaining bread I break into cubes and fill in any spaces and just place on top of the first bread layer. Then I sprinkle the cranberry or raisins on top of the bread, followed with a light sprinkling of the sugar.
In a measuring cup or bowl, I add the cream, milk, eggs and vanilla then pour this over the bread/fruit mixture. Let this set for 45 minutes.
After the 45 minutes of soaking, in a preheated oven of 350 degrees, the mixture is baked for approximately 40 minutes until puffy, browned and a knife inserted in the center comes out clean.
Any puffy spots will sink as the pudding cools. This can be enjoyed warm or cold.

Simple Potato Salad Bites! Affordable Egg Recipe by Amy H.
When I go to the family get togethers I always take deviled eggs. Well next time they are in for a treat. I am taking some of these potato salad bites and some stuffed tuna eggs. Oh by the way, I made this up myself. I don't know if anyone else does it. I didn't find it somewhere else. I was just messing around in the kitchen.
- 3 large red potatoes
- 12 eggs
- 1 1/2 cups creamy salad dressing (I use ranch).
- 3 tablespoons real bacon pieces
DIRECTIONS
- Bring a small pot of water to a boil. (some people use salt in the water, but its not needed) Add potatoes; cook until tender but still firm, about 15 minutes. Drain and cool.
- Place eggs in a saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool.
- Peel the eggs and cut egg white in half.
- Dice the egg yokes and potatoes. (Make sure not to do anything with whites right now). Combine in a mixing bowl and add the salad dressing and bacon.
- Toss the potatoes and egg yokes.
- Now take a tablespoon and spoon the potatoe salad in the egg whites. Chill and eat later. Can top with Peprika, salt and pepper to taste.

Incredible Egg Recipe: Spinach Quiche (Yummy!) by Jessica S.
My mom taught me this recipe, and I have no idea where she got it. I make this easy and affordable meal AT LEAST three times per month. It will feed two people until they are full with another meal of leftovers! My husband I love it and look forward to that golden pie coming out of the oven. :)
INGREDIENTS:
3 large eggs
2/3 cup bacon bits
1 package fancy shredded cheddar cheese
3 tablespoons milk
1 frozen package spinach
1 ready-made pie crust
1/3 cup diced onion
DIRECTIONS:
Preheat oven to 400 degrees. In large bowl, heat frozen spinach according to the package instructions and drain. Add eggs, bacon bits, milk, and onion. Mix well. Add half of mixture to bottom of pie crust. Sprinkle 1/2 bag of shredded cheese evenly over mixture. Add second half of mixture. Sprinkle 1/2 bag of shredded cheese over mixture. Bake 25 minutes until golden brown and fluffy on top! ENJOY!
SERVINGS:
5-6 people with one piece each.
COST:
Approximately $6.00 - $8.00 for the whole meal!!

Mother and Child Reunion Scrambled Egg Burrito (serves two)
4 eggs, lightly whipped with a fork
4 8" warmed tortillas
1 tablespoon of butter
1 teaspoon olive oil
2 tablespoons sour cream
½ cup of diced or shredded cooked chicken
½ cup of shredded cheese-Cheddar, Swiss, or Monterey Jack
Optional Add-Ins
2 tablespoons salsa
2 tablespoons chopped olives
¼ cup diced tomato
2 tablespoons chopped fresh parsley or cilantro
Eggs truly are incredible. Not only are they an affordable source of protein, but they are also quick to cook and versatile. I could just as easily make this recipe with shredded pork or beef or diced ham and it would be equally tasty. I chose chicken for the obvious Paul Simon song tie-in.
The key to this quick meal which can be served any time of day is to have everything prepared ahead. Heat the butter and oil in a sauté pan, pour in the eggs, chicken and cheese. Scramble-stirring frequently until they are light and fluffy. Divide the mixture into fourths and put it on the tortillas. Add any of the optional add-ins and a dollop of sour cream. Roll up each burrito and serve while still hot. Make sure you have plenty of napkins to catch any drips.

Cheese Egg Omlet. about 4 eggs with a dash of milk. half cup of chopped ham, and one slice of cheese with a little chopped onion. Cook eggs till half way done then add all the stuff. Cook till all the way done. Then add sour cream on top with a little salsa. yum.

They all sound so good, especially the bread pudding and the Burritos. Mmm...making me so hungry. I love eggs and cook with them very often. I buy them 2-18 egg containers at a time at Costco and it takes about 3 weeks to use them all.
