For the breakfast version, you will need:
*baking potatoes (one per person)
*eggs
*butter
*cheese (any kind will do. This time I used shredded Mexican style)
*omelette items of your choice (breakfast meat, peppers, mushrooms, tomatoes, cheese - whatever your family likes)
*topping items of your choice (I used cheese, sour cream, and salsa)
Directions:
Wash the potatoes, stab them with a knife or fork, and "bake" them in the microwave until tender. Meanwhile, fry your breakfast meat (I used turkey bacon this time around. Any meat or meat substitute will do.) and any vegetables you are using, such as green peppers, in a skillet. This version was veggie free.

When the potatoes are done, place one on each plate and cut in half lengthwise, then widthwise so the potato falls open into fourths:

Smear with a little butter, then top with cheese.

Prepare your eggs for scrambling. For my husband and I, I whisked three eggs with some milk and cheese:

When the meat and veggies are cooked through, add the eggs to the skillet and scramble until done.
Spoon the egg mixture over top of the potatoes and cover with the toppings of your choice. I used extra cheese, sour cream, and salsa:

Serve with toast:

Tina, this sounds wonderful. My one son loves scrabled eggs, cheese and salsa together. I am going to try this for him this week, he is my picky eater. He will not order omelettes out in a restaurant because I make the best omelettes (so he says) and no one elses omelettes can compare. Sometimes I think he says things like this to butter me up for something. lol
Your Mom once commented on a overnight breakfast you made while visiting them, you prepared it at night and left it in the fridge and then baked it in the morning? I think there were two of them, one I think was some kind of french toast and there was something else. I would love it if you would share those with us too. hint, hint.
Hmmm, I vaguely remember this, but it was a loooong time ago. I'll have to ask mom about it and see if she remembers where the recipe came from. Not sure if its something I found or something she found. I'll see what I can do. ;)
I also love turkey bacon, I like it more than the regular bacon.
