Back in March Pastor Ebeneser (sorry for the spelling) came to Association of Christian Truckers from Giana. I really could sit and listen to him preach all night. His wife made the most wonderful Peanut Butter Soup something I never had before. I looked online to find the recipe and found one that seemed close to hers. Wasn't as good as hers but sure was good.

RECIPE INGREDIENTS:
2 medium onions, chopped
1 garlic clove, crushed
1 tbsp. vegetable oil
1 28-oz. can crushed tomatoes
1 13 3/4-oz. can chicken broth
4 cups water
2 large yams, peeled and cubed
1 cup creamy peanut butter
1/4 tsp. cayenne pepper
1/4 tsp. salt
2 cups cooked chicken pieces (optional)
1/2 cup crushed peanuts (optional)


1. In a large soup pot, sauté the onions and garlic in the oil over medium heat for about 5 minutes. Add the tomatoes, chicken broth, water and yams. Cook over medium-low heat for 25 minutes or until the yams are soft.
2. Stir in the peanut butter, cayenne pepper and salt. Let cool for 30 minutes.
3. Puree the soup in a blender or food processor, then pour it back into the saucepan and warm. If desired, sprinkle the soup with the cooked chicken and crushed peanuts. Serves 6 to 8.

I never heard of it before they came either. It is really good I love it. I did add extra peanut butter to mine to try to thicken it more like hers was.
James just loved it. In fact he ate a whole bowl which he doesn't do often.

peanut butter soup??????????? hmmmmm, I will have to pass on this one, and I will try almost anything once, but, I would just as soon make homemade chicken noodle soup, it cures what ails you, I swear it has healing properties, I make it, whenever someone around here gets the sniffles, and poof, they are better, but thanks for the recipe

This is amazing! I've just recently read and reviewed a book called "How Sweet it is" in which there is a recipe for Peanut Butter Soup. I had never heard of it and now twice in two weeks!

That is really weird hearing about it like this. I really like it, so does James he loves it. Eric isn't big on peanut butter period but he even eats a bowl of it. He said not something he would eat every day.
I'd never heard fo this, but it really does sound interesting. Must be worth trying.
