I was the provider of musical ambiance at a Farmer's Market where I was offered some free produce from one of the farmers (who apparently enjoyed my playing) so I grabbed some red Spring Onions and a couple of bunches of nice luxuriantly leaved BEETS.
While searching among a jumble of small bags seeking possible Pickling Spices, I happened to glance at a lower basket in the wire drawer cabinet.
There I saw some quite robustly sprouted and shriveled potatoes.
I knew I had to photograph them and share them with fellow devotees of the Truly Gnarly (and, of course, Towels), (oh, and um, potatoes, I guess).

Yep! I just made a large jar of pickled beets, and then decided to do the red Spring Onions too.
I had some extra pickling vinegar left so I cooked the beet greens in it.
Yummy!
I have seen their siblings and they live at my house.
When you see them break it to them gently that their brothers over here got composted.

Mr. Potato Head's ugly sisters? I think they are beautiful, but kids don't try this at home! Never eat spuds with studs or green things.

Got a compost pile? Throw those taters on it and cover 'em with leaves and what not, and they'll grow you a whole treasure of new potatoes. FUN to dig them up.
