On with the discussion of healthy herbs. One of the most common and probably the least thought about herb is
PARSLEY
Of this herb's 30 kinds, Italian, or flat-leaf is a favorite because of its peppery flavor.
In addition to vitamins A, C, and K, parsley cvontains the photochemical polyacetylene, which helps reduce cancer risk. A sprig can also fight bad breath, thanks to its odor absorbing chlorophyll.
Toss with cooked, roasted beets and goat cheese, or add parsley to mixed green and dress with a simple vinaigrette.

I Love Parsley
I have parsley growing as well. It seems to be incredibly low maintenance.
I have parsley growing in my herb garden. It grows like a weed, no maintenance at all required.
I forgot too that I also have some flat leaf growing in my garden. I planted some new last year and it's coming up again great this year. :)
I don't use Parsley much but I do grow it in my garden for the Swallowtail butterflies to lay their eggs on.
We do grow some parsley, I can't remember if it came up last year or not though
I love cooking with fresh herbs. It adds so much more to your meal.

I'm not a huge parsley fan. Well, it's okay fresh, but I don't like it cooked because it gets all soggy and the texture is nasty. ;-)
I rarely make a tomato sauce without parsley - gotta have it in my soups and stews and any salad.
One popular dish in Germany is serving baby potatoes rolled in melted butter and chopped fresh parsley - yum.
I use parsley in a lot of dishes I cook, I haven't tried the italian kind, will check it out. Thanks Nancy!
I have been using the dried kind. I should go buy a plant and put it in my garden this year.
