I've been wanting to try this recipe for years, but shied away from lighting my food on fire.
I wish I hadn't waited so long, this stuff is amazing.
1/2 cup unsalted butter
3 T light brown sugar
4 ripe bananas, peeled and sliced
1/4 t cinnamon
1/8 t nutmeg
1/2 cup rum
ice cream (I used moose tracks)
Melt butter in a large heatproof frying pan; add bananas and cook on each side for 5 minutes.
Sprinkle bananas with sugar, cinnamon and nutmeg.
Pour in rum. Once the alcohol is heated, carefully light with a match. (I used a stick match).
Gently tilt the flaming sauce til the flames die out.
Serve immediately over ice cream.

One of my favorite foods ever is a chicken which you pour flaming rum over and let it burn off... it's pretty great, too. Oh, and it's stuffed with bananas. Now that I think of it, there seems to be a theme here...
since I don't eat bananas.Ihave a challenge for ya....Mango fosters???? with coconut rum..over coconut ice cream....
