I spent hours looking for various "authentic" KFC style recipes. The only area where most of the recipes seemed to agree was the use of a pressure cooker.
This is my adaptation of those recipes found in various sources. While it wasn't "KFC" it was still damn fine chicken, falling off the bone.
1 1/2 cups buttermilk
1 T hot sauce
1 chicken bouillon cube, divided in half and crushed fine
1 t garlic powder
1 t marjoram
1 t white pepper
1 t onion powder
1/2 t ground sage
1/2 t ground savory
1/2 t parsley, rubbed
1/4 t ground ginger
1/4 t Oregano, rubbed
1/4 t thyme leaves, rubbed
1 cup flour
1 egg
1/4 cup buttermilk
pinch brown sugar
Mix buttermilk, hot sauce and half a bouillon cube in a large ziploc bag. Add chicken pieces and marinate overnight, turning bag often.
In a large container with a tightly fitting cover, mix herbs and spices. Stir in flour. In a separate large flat container mix egg, buttermilk and sugar and remaining cube.
Dip chicken pieces in egg mixture then place in flour mixture. Cover flour container tightly and shake chicken pieces til they are well coated. Remove pieces to a large platter or plate and let rest at least 30 minutes before cooking.
Cook chicken according to pressure cooker directions.
Drain chicken on a rack over a large baking pan.
I served the chicken with mashed sweet potato and stuffing and gravy. What an awesome dinner!

I've never used a pressure cooker, so I don't know anything about it, but I've also never been impressed with the results when I've eaten other peoples' pressure cooker recipes. Is it just me?
